DIY Elderflower Cordial

Elderflower season is in full swing! The creamy blossoms of the Elder tree burst with a pleasant aroma from early May to mid-July. Their arrival is a sure sign that summer is near. 

While Elderflower’s medicinal benefits are often overlooked in favour of its fruiting counterpart, (Elderberry), it’s been used in traditional herbal medicine as an antibacterial, antiseptic and anti-inflammatory herb. Much like Elderberry, Elderflower is rich in bioflavonoids and helps to relieve sinus and lung congestion. It’s also a diaphoretic and diuretic, and gently cleanses the waterways of the body. This herb is safe for the whole family.

Harvesting Elderflower: 

Elderflowers are best harvested on sunny mornings after the morning dew has dissipated. While harvesting Elderflower, be sure to clip the flower clusters mindfully, not taking too much from each branch. This ensures the tree’s berries will grow abundantly later in the season! 

WARNING: While Elderflower is safe for consumption, its twigs, leaves and roots are considered toxic. Be sure to remove the potentially poisonous leaves and twigs from your harvest before creating your cordial!

Try this Elderflower Cordial to cool off on warm summer days and balmy nights! 

 

(Makes 1 Litre)

You’ll Need: 

1 Litre of Pre-Boiled Water 

2 Cups of Honey 

2 Organic Lemons, juiced and zested 

15 fresh Elderflower umbels, or about 300g of dried Elderflower 

1 Litre Mason Jar

Cheesecloth

Directions:

1. Pre-boil water in a large pot and let cool to warm temperature.

2. Process Elderflowers, removing any twigs, leaves and stems.

3. Add honey, lemon juice, zest and Elderflower to pot and stir gently.

4. Let the mixture sit for 3-4 hours.

5. Strain through cheesecloth or nut mylk bag and bottle.

6. Refrigerate for up to 2 weeks and enjoy this refreshing herbal cocktail on hot summer days!
